CIEH Level 2 Award in Food Safety

Course Suitability

The CIEH Level 2 Award in Food Safety provides fundamental food safety advice for all those requiring food hygiene training for industry. It is specifically designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

The Level 2 Award in Food Safety follows on from the CIEH Level 1 Award in Food Safety.

Training Overview

Food hygiene and safety training providers have identified a growing need to make food safety learning more relevant to specific business environments to increase effectiveness. Reflecting sector-specific needs these food safety qualifications are required to address new National Occupational Standards.

In line with this demand, the CIEH Level 2 Award in Food Safety has been designed to address the food safety and hygiene needs of the catering, manufacturing and retail sectors and has been developed to allow courses to be tailored to meet the needs of staff working in these specifc areas.

Those successfully completing the course will be awarded a qualification appropriate to their working environment:

  • CIEH Level 2 Award in Food Safety in Catering
  • CIEH Level 2 Award in Food Safety for Manufacturing
  • CIEH Level 2 Award in Food Safety for Retail

Course Content

The Level 2 Food Safety course is designed to make candidates aware of the key health and safety issues and the part that they should play in keeping themselves and others free from harm in the workplace.

The training course will cover the following topics:

  • Legislation
  • Food safety and hygiene hazards
  • Temperature control
  • Refrigeration, chilling and cold-holding
  • Cooking, hot-holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

Assessment

The Food Safety Level 2 Award is knowledge-based and will be assessed by means of an external assessment. Each unit is marked by means of a multiple choice examination.

This course is QCA (Qualifications and Curriculum Authority) Accredited.

Course Duration

The CIEH Level 2 Award in Food Safety is run as a full day training course.
